Turkey over a charcoal fire How To?

Hi Guys/Gals,
Just looking for some additional input as to cooking a 22 lb turkey over a charcoal fire, suspended from a tripod surrounded by heavy aluminum foil

I know a turkey cooked in an oven stuffed is generally 20 minutes a lb but unstuffed?
and would you marinade it? soak in a brine? or injectable marinade?

Unstuffed, the bird should be a little bit faster, but I would take along a meat thermometer and not just rely on time.

I personally am a fan of the injectable marinades. Use one of those and then rub any other spices UNDER the skin so they flavor more of the meat.

I think I may make a run to Gander Mountain and see what they have as far as injectables..
and so far as i can see a good guestimate is 10 minutes per lb but I will check with a thermometer

Take out the good old cookbook it usually has a timetable as a base ,the thermometer is the best. You cna also cook it on a grill like a weber . Place a drip pan under the bird below the grate,the charcoal is then placed beside the pan. I would partially cover the bird with aluminum foil. Try using 7-up to baste the bird.

or, you could go with the good ol' trash can turkey. stick a metal stake in the ground, put a plate over that, about 3 in. above the ground. the find a lrage metal trash can to fit over the whole thing. put charcoal on and around it, and lite. wait 4 hrs, and it should be done.

I have done this, but with wood coals not charcoal. I suspended the bird from a tripod and put foil above the bird to reflect the heat downward. I did not wrap the bird. It took most of a day and you have to keep the coals going, but by the end of the day the meat was falling off the bones. It was great!

Trash can turkey is the way to go
mine was 15lb took 2hrs un stuffed the whole turkey just fell appart it was so goodImage

Do not stuff the bird. It is too hard to get the get it hot enough with stuffing. The earlier posts mentions unstuffed which is good.

we use 5 gal pails( non galvanized) to cook about a 14 lb bird sitting on a hickory stick. ( we are talking of trying a sweet wood lik apple.
